2016 Skelepear

Still Dry Perry
$16 | 750 ml

A sweet nose of fig compote, white grape juice, and my favorite cannoli. Then, a mouthful of piercing acidity, sweet lime juice, crisp green pear. The finish is all tannin with lots of coarse, crunchy stone.

Serving Suggestion:

Pair this cider with pork of almost any kind, especially cured meats and charcuterie. Also pizza, especially grilled, and all manner of grilled vegetables.

The Story of Skelepear

The Skelepear is largely defined by the acidity of the wild pears that make up over half of the blend.  With a TA of 9.9 grams/liter, it wakes you up and brightens your day.

All of the wild pears were discovered and harvested by our friend Akiva Silver, who owns Twisted Tree nursery with his wife Megan.  Akiva, who forages for nuts to grow out in his nursery, found a grove of huge pear trees in the Finger Lakes National Forest, a national park of 16,000 acres along the ridge between Seneca and Cayuga Lakes.  One of the trees yielded 30 bushels alone.

Tydeman’s Early is an eating apple bred in England in the 1920s and grown in our partner's orchard for its early harvest characteristics.  We discovered it a few years ago when we pressed and fermented it and were surprised by its flowery aromatics.
