Semi-sweet Sparkling Cider

The nose is all about concentrated apple skins, apple pie and a bit of caramel. The mid-palate is rich and weighty and the finish is carried by creamy bubbles and balanced acidity.
This is definitely a cider for sipping all by itself. It's also divine paired with sharp blue cheese. For dessert, try serving alongside a fresh fruit tart.
The Story of Rustica 2018
What does it take to make a great sweet cider? This is a question the cider industry, having made a name for itself churning out sugar sweetened cloying six packs for the last decade, should be asking itself. Dry cider is one answer to the question, and certainly our focus here at Eve's Cidery. But having been deeply moved by an otherworldly keeved (and sweet) French cidre, the ideal of making an amazing sweet cider has remained a holy grail of sorts for us.
This cider is not keeved or an attempt at a French-style cider. It's a cider for when you want something rich, thick, balanced and is born out of the particulars that are unique to our farm. After pulling high gravity juice for ice cider from frozen tanks in February, we took the remaining blend and fermented it with wild yeast in our chilly cellar. The cryo-concentrated juice that started at 18 brix was racked with quite a bit of residual sugar remaining, bottled for a partial secondary fermentation and then disgorged. Naturally sweet, naturally sparkling.
