The Story of Circle Field 2022

The first time we made this cider was in 2020. We had a tank of cider made from fruit harvested at James’s orchard, heavy on the variety Krys, that just wouldn’t finish to dryness. We kept tasting it and one day said: “why not just bottle it now? It’s so good with a little residual sugar.”  So the funny thing is, pretty much the exact same thing happened this year, except I totally forgot it had happened before. We had a tank that just wouldn’t ferment dry. Julia was testing gravities in the cidery and pointed this one out and we tasted it and both agreed, why wait when it’s so good like this? Lo and behold, when I sat down to look at the cider log, this blend was very similar to the first Circle Field, both in variety make-up and residual sugar. Serendipity (or forgetfulness) has led to a reprise of the Circle Field Blend.
