Amazing Chocolate Truffles
EXTRAORDINARILY EASY CHOCOLATE DESSERT
Melt in your mouth truffles are so fancy, so good and so easy to make. You can customize the basic recipe with almost anything, from espresso to almond but we love the warmth of cinnamon and the smokey heat of chili to pair with our ice cider.
MEXICAN CHOCOLATE TRUFFLES:
8oz baking chocolate (I recommend high quality, fair trade bittersweet dollops, like these from Tierra Farms)
1/2 cup heavy cream
1 teaspoon cinnamon
1 teaspoon vanilla
Cayenne to taste!
Chocolate must be in small pieces. Heat cream in a sauce pan until it bubbles, turn off heat. Add chocolate and stir until melted and smooth. Let sit in the fridge for at least 2 hours.
Form into balls and do any of the following:
-roll in chili flakes and cocoa nibs
-roll in cocoa powder
-dip in pure melted chocolate (for a hard shell)
