Evolving aromas of powdered sugar, cloves, and espresso mingle with suede leather, cowboy sweat and a bit of glamour which hang off an angular frame. The mid-palate is hefty, with a hint of refreshing bitterness which dissipates into a tropical finish of ripe, sweet-sour pineapple.

Ripe and smoky, the nose on this cider is classic bittersweet apple: apples left in the orchard, roses, dust, honey, bacon, leather, and damp leaves. The mid-palate is thick, rich and textured. In the finish, chalky tannin dominates with dried apples and woodsmoke.

A lovely nose of melted sugar, apple crates, and anise. In the mouth, rough-sawn wood and tobacco dissolving into chewiness. The finish has substantial weight and smells like Christmas spice cookies.

Sweet on the nose, with honey, flowers and lychee but balanced with darker aromas like damp wood and coffee. Flavors of citrus peel and quinine hang off a taut tannic frame in the mid-palate. The finish has plenty of dusty brown tannin and bittersweet apple skin.

The nose starts with ripe, ripe, red fruit which yields to complex aromas of apple blossoms, marzipan, cream soda and tamari. The palate is soft and full, reminiscent of white wine but with the juicy flavors of limeade and salted pretzels. The finish is red cherry preserves with vanilla bean and silty tannin for miles.

Complex aromas of goldenrod, jasmine, beeswax, cowboy sweat, leather, and smoke transition to the rich fruity flavors of peach cobbler, cantaloupe, and citrus rind. The mid palate is very full, with well structured tannins reminiscent of rough sawn wood. The finish is firm and dry with long lingering tannins and balanced by bitters and citrus.
